Pav Bhaji

What we need:

  • Fresh pav-12
  • Oil-2 tbsp
  • Potatoes-2
  • Fresh peas-4 tbsp
  • Onion-1,small
  • Tomatoes-4
  • Ginger garlic paste-1 tsp
  • Curry leaves-10
  • Turmeric-1/4 tsp
  • Coriander powder-1/2 tbsp
  • Red chilli powder-1 tsp
  • Everest Pav Bhaji masala powder-1 tbsp
  • Coriander leaves-1/4 cup
  • Water-1 1/2 cup
  • Amul butter,lemon wedge,coriander leaves ,chopped onion and sev for garnish

How we make:

Clean and dice all the vegetables

  • Heat oil in pressure cooker
  • When it’s ready,add curry leaves,ginger garlic paste and saute it
  • Add onions and saute till the colour changes
  • Add turmeric,coriander and red chilli powder and stir
  • Cover and cook for 2 mins
  • Add potatoes ,peas and tomatoes

  • Add water,salt and pav Bhaji masala powder and cook on low flame
  • Once it starts boiling,check for the spices and gravy thickness
  • You can add extra water to make thin masala
  • Add coriander leaves and pressure cook for 4 whistles till potatoes are nice and soft
  • After the pressure goes away open the lid and with help of wooden spoon or potato masher mash the vegetables
  • If required add some more water and adjust salt
  • Switch on the flame and cook for another 2 to 3 mins
  • The Bhaji is ready,garnish it with coriander leaves
  • Butter roast the pav on tawa
  • Take the bhaji in a serving dish and garnish it with chopped onion,butter,sev and lemon juice
  • You can slit the pav in half,apply butter on one side and peanut chutney powder on the other side ,roast it and serve
  • Or you can even serve the pav plain along with the bhaji.

Total time spent: 40 to 50 mins

Alternate method

  • Take diced and boiled vegetables (cauliflower,potato,carrot,peas).
  • Heat oil in a kadhai
  • When it’s hot add curry leaves,ginger garlic paste and stir it
  • Saute well and add onions
  • Add the spices and saute for 4 to 5 mins
  • Now add tomatoes and cook till it’s soft with lid covered
  • Add dry spices and vegetables
  • Add salt,pav bhaji masala and mix well
  • Use a potato masher and mash the veggies and masala
  • Add little water and mash it again
  • Adjust the gravy consistency and cook for 2 mins
  • Sprinkle coriander leaves and serve hot
  • Garnish with lemon juice,butter and sev before serving it
