Egg Masala

Dish name: Egg Masala

What we need:

  • Hard Boiled eggs-4
  • Oil-3 tbsp
  • Dry coconut-1/2 cup,grated
  • Ginger-1/2 inchpiece 
  • Garlic-5 to 6 clove
  • Onion-1 medium,roughly chopped
  • Curd-3 tbsp
  • Red chilli masala powder-3/4 tbsp
  • Turmeric-1/4 tsp
  • Garam masala powder-1 tsp
  • Bay leaf-1
  • Khuskhus-1 tsp
  • Sesame seeds-2 tsp
  • Cashew-6 to 7
  • Coriander leaves and Kasuri methi for garnish

How we make:

  • Add a tsp oil on frying pan ,and roast onions ginger garlic for a min,then add sesame,khuskhus and coconut and roast for 4 to 5 mins till golden brown colour.
  • Grind the masala in a mixie,adding water little by little to form thick paste
  • In cooking skillet add oil and once it’s ready add the bay leaf
  • Now add the paste and stir well for about 3 to 4 mins
  • Once you saute the masala nicely till aroma comes,then add turmeric,chilli masala powder ,salt and garam masala
  • Add curd,water and cover and cook for 5 mins
  • Meanwhile grind the cashew with some water and add to gravy
  • Cover and cook till masala is mixed well with all spices and oil leaves sides of the pan 
  • Now add the boiled eggs and coriander leaves
  • Garnish with kasuri methi and serve with phulka or chapati

    Total time spent: 30 mins

    The recipe is mild spicy and you can increase the spicyness by adding more chilli powder.You can serve the boiled eggs separately with gravy or make two slits on the eggs and add it to gravy just  before switching off the flame and then garnish it with coriander and kasuri methi.

    For this recipe I used the homemade chilli powder i.e Kanda lasun chutney Mirchi powder.If you don’t have it then use the regular chilli powder along with cumin-coriander powder and garam masala
