Vegetable Upma

Dish name: Vegetable Upma

What we need:

  • Roasted sooji rava-1 cup
  • Water-2 cups +1/4 cup
  • Grated ginger-1/4 tsp
  • Oil-2 tbsp
  • Curry leaves-6 to 7
  • Mustard seeds-1/4 tsp
  •  cumin seeds-1/2 tsp
  • Turmeric-1/4 tsp
  • Urad Dal and chana dal-1/2 tsp each
  • Ghee
  • Onion-1 small,finely chopped
  • Tomato(optional)-1/4 cup,finely chopped or juice of 1/2 lemon
  • Fresh peas( matar) or boiled black peas and carrots- 1/4 cup
  • Green chilli-2, chopped
  • Coriander leaves and fresh coconut ,sev for garnish
  • Salt
  • Sugar

How we make:

If you have  plain rava at home,then lightly roast it till it leaves the fragrance .

  • Place a cooking pan on medium flame,add oil to it
  • Once ready add the mustard seeds and cumin seeds
  • Once it splutters,add the dals,ginger , chilli,Curry leaves,turmeric and saute it for  a minute
  • Now add the onions and roast it well
  • When it turns soft ,add the tomatoes and peas and stir till tomatoes turn soft
  • Add salt , water and cover the pan
  • When the water starts to boil,slowly add the rava and stir the mixture with other hand to avoid lumps
  • Check salt ,add some sugar and cover and cook till the water is absorbed by the rava
  • Once the sooji is nicely cooked ,garnish it and serve hot
  • While serving add ghee and sev over it

A healthy,easy, delicious breakfast/snack is ready to eat
