Kadhai Murgh

Dish Name: Kadhai Murgh


What we need:

  • Chicken with bone-250 Gms
  • Ghee-3 tbsp
  • Turmeric-1/4 tsp
  • Red chilly powder-1 1/2 tsp
  • Coriander powder-1 tsp
  • Onion- 1 big,sliced thin
  • Red or Green capsicum- 1 medium ,diced or sliced big
  • Curd-1/4 cup
  • Ginger garlic paste-1/2 tbsp
  • Dried green chilli-1
  • Black cardomom-4
  • Cinnamon-1 inch long
  • Cloves-4 to 5
  • Bay leaf-1 big
  • Coriander leaves  – finely chopped
  • Mint leaves and fresh methi leaves to garnish
  • Salt as needed

How we make:

Marinate the chicken with curd,salt,red chilly powder and ginger garlic paste and keep in fridge  for at least one hour .

First shallow fry capsicum for 4-5 mins in 2 tsp ghee and keep aside

  • In a non stick pan,add the remaining ghee,when it’s hot add the dry spices and saute them well
  • After a min or two,add onions and saute it.
  • Saute well till it’s light brown in colour but make sure you don’t burn it
  • Now you can add turmeric,coriander powder and few coriander leaves
  • Add the marination and sprinkle some water as you stir the mixture
  • Close the lid for 5 mins and cook on medium flame
  • After 5 mins the chicken slowly leaves its juices
  • Add the salt,capsicum and adjust chilly powder if you want the dish more spicy
  • Stir well ,add some water just to make chicken tender but not rubbery and maintain gravy thickness.
  • Red capsicum and chicken will taste better for this recipe when its crunchy and tender
  • Keep monitoring the chicken as the time to cook it may vary depending on how long you marinate the chicken
  • Once it’s done ,a minute before you switch off gas add the fresh  methi or kasuri methi leaves and cover the lid
  • Garnish it with mint and coriander leaves and its ready to be served hot with tandoori roti or phulkas

    Total  time spent :  marination time+35 mins(cooking time)

    You can make this recipe totally vegetarian by replacing the chicken with paneer or boiled eggs.The marination style will slightly vary .I will add these recipes soon.
